Rademaker Sheeting & Laminating Line

Sheeting

Stress-free dough sheet forming is the first step in the laminating process. Depending on the dough type and the required capacity, a certain extruder system can be chosen. This guarantees a stable, consistent dough sheet as the basis for high-quality lamination. 

Fat Pump

The fat pump transforms fat blocks into a continuous sheet. After the fat sheet is applied to the dough sheet, it is encapsulated by the dough. The mobile fat pump can be fully dismantled for fast and easy cleaning.

The unit is a robust solution with excellent dosing accuracy during the full lifespan (minimum 10 years). 

Reduction Steps

Several reduction steps are applied to achieve a consistent dough sheet with the exact number of layers your product requires. Thickness is reduced step by step in a gentle manner to preserve the layers and maintain optimal dough quality.

Modular Configuration

This configuration shows a set-up making laminated dough with three sections.

Every bakery has its own preferences and methods for producing the products they favor. The sheeting line can be configured from different processing sections, assembled from the appropriate modules based on the desired end product, which may also include dough block making or dough block processing. Based on your product requirements, the production line is configured for optimal dough handling performance.

Cooling & Resting CABINET

The optional Cooling & Resting Cabinet improves dough quality and consistency by allowing controlled cooling and resting. This process enhances flavour development, supports starch conversion (Maillard process) for better taste and colour, and enables optimal butter crystallisation, improving texture and overall product quality. Relaxing the dough results in a uniform structure with minimal shrinkage.

The system is designed to operate efficiently and hygienically, with minimal maintenance requirements.

Modular Configuration

In this configuration, the line runs continuously with an integrated cooling & resting cabinet. The dough automatically moves through the cooling and resting phases without manual handling, ensuring a seamless flow.

Operating the line

The HMI controls the complete production line and serves as the central hub for tooling. With its user-friendly interface, smart line control, automated process features, and extensive recipe management, it ensures fast setup, accurate positioning, and effortless operation every time.

In this configuration, the dough block processor handles dough blocks coming from the cooler or retarder. The system offers flexibility in both size and thickness, making it suitable for a wide range of applications, including brick and overlap stacking configurations.

Equipped with multiple reduction stations, the processor gradually reduces the dough to the desired thickness, ensuring optimal preparation for feeding the Pastry Make-Up Line.
