Do you want to produce only plain croissants, or both plain and filled croissants? Proper rolling is the key to producing a high-quality croissant. Radini offers a range of Croissant Rolling Units designed specifically for this precise process. Choosing the right Croissant Rolling Unit depends on the type of croissant you want to make.

R-Moulder

Is your need to produce straight, unfilled croissants only? Then the dedicated Rolling Moulder is the best solution for you. The R-Moulder rolls the dough triangles into croissants using rolling technology

B-Moulder

Bread Croissants

For bakers that require special moulded bread types like Salzstangen, Gipfel, Pao Frances or Kornspitz, we offer our Bread moulder. It is called the B-moulder because it is designed for products based on a bread type dough

V-Moulder

Filled Croissants

When you want to produce filled and unfilled croissants. The V-Moulder rolls dough triangles by use of vacuum technology. With the Vacuum Moulder you are also able to produce open- and closed-ends croissants

Laminated Dough

The croissant-making process starts with a consistent, uniform dough sheet produced by the 3 section laminator. This dough sheet is then transported to the universal pastry make-up line

Lane cutting & spreading

The dough sheet is first trimmed on both sides and then cut into lanes. It is spread evenly using an overhead spreading module positioned above the universal line. 

If you are producing filled croissants, the filling is inserted at this point in the process.

Triangle Cutter

Once the dough is evenly spread, it is cut into precise triangular pieces by a traveling guillotine cutter that moves along with the dough.

Turning Unit

After the products are cut to size, they are turned and aligned with the triangle base to the front, preparing the dough pieces for the rolling operation.

A water sprayer moistens a precise area of the croissant, to secure the croissant shape after rolling the dough pieces.

Rolling

The final step in producing a croissant is rolling, the precise moulding of the dough into its characteristic shape.

Radini offers three different croissant rolling units to suit this process. Choosing the right rolling unit depends on the type of product you want to produce.

Modular Configuration & Tooling

Our croissant module is an addition to the Pastry line.

The croissant module functionality consists of small number of additional units, based on movable frames. This flexibility enables a minimal impact in your bakery while making croissants in various shapes and sizes.

The croissant modules are mobile and interlocked, making them easy to position and remove while also providing excellent accessibility for cleaning.
